Tasting Notes and Food Pairing Suggestions

  • Grilled sliced hanger steak topped with wild arugula, shaved Parmigiano Reggiano, and grassy extra virgin olive oil
  • Pappardelle with lamb ragu
  • Braised pork shanks with shallots, Greek gigante beans, and stewed tomatoes

Xinomavro, Greece's answer to Pinot Noir or Nebbiolo (depending on who you ask), is showcased beautifully in this small batch wine made by a 28 year-old winemaker in the Naoussa region of Macedonia. The "40" on the label alludes to the 40 days of maceration and color extraction that the wine underwent before being fermented. Brawny tannins, fresh acidity and pure red cherry fruit make this wine fully fit for cellaring. Decant before drinking.
