Tasting Notes and Food Pairing Suggestions

  • Grilled ribeye steaks
  • Cocoa and ancho chile braised lamb shanks
  • Grilled butterflied leg of lamb rubbed with rosemary, garlic, and fennel seed

This brawny single vineyard Shiraz made by female winemaker Corrina Rayment is extremely well-composed, unfiltered, and packaged in an unusual angular bottle that recalls an expensive bottle of balsamic. Heady aromas of smoked bacon fat and barnyard lead into an equally meaty and fleshy palate that boasts succulent blackberry and boysenberry fruit, cracked black pepper, and warm layers of mocha and dark chocolate. This is by no means a shy wine, yet despite its 16% alcohol content, it still manages to come off balanced and very sophisticated.
